Taco Bell Cantina Bowls

I love to cook. I get alot of inspiration from pinterest and alot of my ideas are copy cat recipes. I find something at a restaurant that I like and I have to recreate it. So, I want to share those recipes here.

Earlier this month, I had a BOGO coupon for the new Taco Bell Cantina Bowls so I tried one. I ordered veggie and I was hardly impressed. I'm chalking it up to be the fact that they are new and the teenagers working had no idea how to make them correctly.

Anyway, I loved the idea so I recreated it today. Here is my semi-homemade recipe:

Black Beans
1 can Black Beans
1 t sugar
1 t crushed red pepper
2 clove garlic
3 stems of fresh cilantro
1/4 of an onion, chopped (I don't measure....)
Juice from 1/2 of a lime

Rice
Old Elpaso microwave rice with corn and red peppers
 (Plus, some of the garlic, onion, cilantro, lime mix)

Lettuce
Cherry Tomatoes
Ranch Dressing
Salsa

In the food processor, add onion, garlic, lime, and cilantro. Chop well. Save half of this mix for the rice. Mix all the ingredients for the black beans and let them simmer for 20-25 min,

Microwave the rice and add it to a skillet. Add in the rest of the onion, garlic, lime and cilantro and mix together. Let heat for 5-7 minutes.

Once heated, add a layer of rice to the plate, then a layer of beans. Top with lettuce, tomatoes and ranch. I also added a little salsa to mine.

It was WAY better than Taco Bell's version. The rice was outstanding to be semi-homemade and the ranch dressing really topped it off well. Unfortunately, I didn't have guacamole :( That would have made this recipe over the top.
